In our household we have a tradition and that tradition is to eat pancakes for lunch, in our pjs, watching movies on the first Monday of every school holidays. Nothing better than a relaxing day with your minis to kick off a couple of weeks of fun! So, in honour of that day tomorrow I thought I’d share my pancake recipe and maybe you and your kids could join in too!
This recipe is soooooo simple team. It never fails and your pancakes always end up fluffy, light and delish!
Ingredients
- 1 Cup Self Raising Flour
- 2 Tbs Raw Sugar
- 1 Egg – Whisk Lightly
- 1 30g Butter Melted
- 1/2 tsp Vanilla Extract
- 1 Cup Milk
Method
Sift flour and sugar into a bowl. Add lightly whisked egg, melted butter, vanilla and milk and stir to combine to a nice and smooth consistency.
Slap on a fry pan or pancake griddle (what I use) and cook for 3 minutes or until bubbles begin appearing then flip and cook for another 1-2 minutes until they look beautiful and golden.
